BUBBLES…..of the World

Schramsberg’s founders, Jack and Jamie Davies were determined to seek out a simpler, more

meaningful life. In 1965, after a yearlong search, they discovered a run-down winery on the

mountainside above St. Helena. The 19th century Victorian mansion presided over the tangled

remains of once stately gardens and underground cellars. The historic Schramsberg property

had been abandoned for years, but the Davies were looking for a challenge. On that day they

decided Schramsberg would be brought back to life.

The Davies had an ambition to make wine, but not just any wine. They were setting out to

produce a world-class sparkling wine, and it was a lofty goal. Later that year, the 1965 Blanc de

Blancs came to be, and would be the first commercial use of Chardonnay in American

sparkling wine.

BURGUNDY CHARDONNAY

Born in January 1973 in Quebec, Canada, Patrick Piuze is the third son of a middle class family.

When he turned eighteen, Patrick met Marc Chapoutier who helped him to get started in

wine-producing. Thanks to him, Patrick travelled all over the world and worked in several

wineries in Australia, South Africa and Israel. Patrick’s main intention is to make a real

difference between "wine grower" and "winemaker". This philosophy enables him to pick the

best lots in Chablis, most of them of very old vineyards, to collect high quality grapes. Through

his wines, Patrick Piuze has always been intent on revealing the true character of Chablis and its

wide-ranging terroirs and vineyards.

“Mr Fabien Duperray spent a lifetime working as THE broker in France for the most

prestigious Burgundy estates: Roumier, DRC, Coche Dury and Ente. However, Fabien sought

vineyards of his own and set out to Beaujolais. Soon after he made his way to the Macon and

using biodynamic practices in array of different soils, Fabien has crafted some incredible

chardonnays from an unexpected site in Burgundy. The expression on his label reads-le ciel

seule limite- which loosely translates to –the sky is the limit. With wine this good though, we

hardly think Fabien will be content with just reaching to the sky. What’s your definition of

heaven? Ours is a glass of his Pouilly-Fuissé and a seafood tower.”

“Chateau Laville Haut Brion debuted in the 1600’s. The property took its name from Marie de

Laville one of the founders of the estate. The earliest known vintage of Chateau Laville Haut

Brion is the 1928. However, the debut vintage was labeled Chateau La Mission Haut Brion.

That practice continued for 3 years. In 1931, the new label read; Chateau Laville Terroir du

Haut Brion, Premier Cru de Graves. That eventually changed to Chateau Laville Haut Brion. ”

Neyers Vineyards sits in the heart of the Napa Valley but Bruce's experience with French wine

importer Kermit Lynch has had an undeniable influence on our wines. Many of the French

producers Bruce works with farm organically, make their wines naturally without use of cultured

yeast or laboratory designed malo-lactic starter, and bottle their wines without fining or

filtration. All of their grapes are picked by hand, into small bins that hold only one-half ton.

They are then laboriously hand sorted and inspected at the winery. We love his wine so much

we bought everything! Chardonnay, Mourvedre, Merlot…….. If you’re looking for a new world

wine with an old world sensibility, then you should be drinking Neyers!

“For over a century the Brunier family has been making wine on the rocky outcrop of La Crau,

the largest plateau in Chateâuneuf-du-Pape. Today the estate is lead by brothers Daniel and

Frederic. When we had the opportunity to welcome Daniel Brunier for not only a staff training

but dinner after, we jumped at the chance. He was super shy and reserved at first… so we did

what we do best. We brought the party. 3 shots, after dinner drinks and dessert in the cellar

later, $hit got real. Not only did we make a friend, he loved us so much he opened up his

Emmanuel Reynaud took take the reins at both Château Rayas and Château Fonsalette in the

late 90’s. He is somewhat reclusive, and can be found working his vineyards at most any time of

day. Emmanuel does not revel in the fame and notoriety that come with making such sought-

after and acclaimed wines, but he continues to carry the mantle of his famous forebears,

producing hauntingly aromatic wines at his three estates. Even today, visiting Rayas is like

taking a trip back in time; the estate did not even have electricity until the late 1980s.

eighties as the leader in St. Estephe. The Chateau sits on a ridge immediately north of the

Pauillac boarder and its famous neighbor, Chateau Lafite-Rothschild. Under the direction of

Bruno Prats, the Chateau advanced itself to the top of its class in St. Estephe, expected to

For former NFL Quarterback Drew Bledsoe, owing a winery has been a longtime aspiration

that allows him to combine his passion for fine wine and love of the Walla Walla Velley, his

hometown. Drew returned in 2007 to plant his original estate vineyard, McQueen, on the

southern end of the Walla Walla Valley AVA. The following year, Drew and his wife, Maura,

launched Doubleback, an estate-focused winery with the goal to produce world-class Cabernet

Sauvignon. Drew collaborated with his childhood friend Chris Figgins of Leonetti Cellars, who

consulted on all winemaking and vineyard practices while training current winemaker, Josh

McDaniels. Josh earned the role with the 2014 vintage after nearly a decade of experience with

the Figgins Family.

“Maggie Harrison worked for nine life changing vintages under the tutelage of Elaine and

Manfred Krankl at the iconic winery Sine Qua Non. In 2005 Scott Adelson, John Mavredakis

and Michael Kramer asked her to become the winemaker at Antica Terra, she emphatically

refused. But the three friends were clever. They asked Maggie if she would take a look at the

vineyard and offer her opinion about the site. She reluctantly agreed. Twenty-six seconds after

Young Italian immigrant Mario Trinchero left New York City and headed west to the Napa

Valley, hoping to build a better life for his wife Mary and their three children, Bob, Roger and

Vera. They purchased an abandoned Prohibition-era winery in St. Helena, refurbishing it and

initially scraping by as a mom-and-pop operation. In 2004 they purchased the Folie à Deux

Winery, north of St. Helena, with a vision for creating their first boutique wines bottled under

the Trinchero Napa Valley name.

“Last week in Paris, at a formal wine tasting organized by Spurrier, the un-thinkable happened;

California defeated all Gaul. The four winning whites were, in order, Chateau Montelena ’73

from Napa, French Meursault-Charmes ’73 and two other Californians, Chalone ’74 from

Monterey County and Napa’s Spring Mountain ’73. The U.S. winners are little known to wine

lovers, since they are short in supply even in California and rather expensive ($6 plus). Jim

Barrett, Montelena’s General Manager and part owner said: “Not bad for kids from the sticks.”

They won for their chardonnay, but built the brand on their cabernet sauvignon. Much like

people, each year/vintage is different and tells it’s own story. I spent 2010 traveling in Spain and

Dr. Pettingill was a globetrotter and bon vivant but he is also known to have been a dentist,

brewer, winemaker, and horse breeder; a character bigger than life, impassioned by science and

the land. The vineyard he planted was one of the earliest plantings in Napa Valley. In 1871,

using only a hand saw to cut the white rock he quarried from the property. Dr. Pettingill also

designed two cellars, where he began the tradition of bottle ageing his wine for 4 years before

release- a method they still proudly practice at White Rock. Sadly White Rock was completely

destroyed in the recent fires in Napa and Sonoma. We’re hoping they rebuild, in the meantime,

we’re going to drink their wine and celebrate their legacy.

CALIFORNIA CABERNET SAUVIGNON/MERITAGE(+++)

Originally a collaboration between celebrated auctioneer Fritz Hatton, his wife Caren, and

acclaimed Winemaker John Kongsgaard and his wife Maggy; Arietta is a wine inspired by

classical musical compositions. The two couples made a formidable team, with Kongsgaard

making the wines and Hatton selling them, each bringing to the table a unique understanding

of the trade. A personal favorite of mine is Arietta’s H-Block, a blend of Merlot and Cabernet

Franc. Sourced from the legendary Lee Hudson’s ranch in Los Carneros, this wine was the wine

that helped build the reputation and lay the groundwork for Arietta’s success. In 2005, Hatton

bought out Kongsgaard to become the sole owner of Arietta. Today, Winemaker Andy

Erickson crafts the wines at Arietta, and they are as good as they have ever been! – Michael

AMY MUNDWILER- Wine Director

“My passion for wine started with a glass of Cab Franc from Chinon. I had just come off of a 15 year retail management career and really didn’t know what I wanted to do with my life. After spending 6 weeks in Spain wandering around, I decided to get a serving job until I decided what I wanted to do with my life. I got a job at a little wine bar that happened to serve a cabernet franc by the glass. I’d never had cab franc before and it blew my mind. 6 years and 3 restaurants later, Belinda Chang gave me the opportunity to be her assistant wine director here at Maple & Ash. She taught me everything she knew, I worked my a$$ off, and haven’t look back. I’ve had other wine that blows my mind, but a glass of cab franc from the Loire, always takes me back. Outside of wine, I sing a little jazz, paint, and have 2 cats (Gigondas and Louis Armstrong).” MICHELLE CRABTREE-Cellar Rat

“I come from humble beginnings of working in a, small town Italian restaurant, where the only wine served was Chianti, Pinot Grigio and White Zinfandel. Many horrible hangovers later, my love for drinking wine grew past my humble beginnings. I have worked in over 30 restaurants (almost more than I care to admit) I went through my “I only drink Merlot” stage to graduating to drinking all things Italian when I worked at Osteria Langhe here in Chicago. My Heart lies in Italy!!!! I LOVE Champagne as well, and love to host a great brunch where plenty is served and enjoyed! “Growing up in Kansas I was lucky enough to work in my family's restaurants alongside a very special woman, my grandmother. At the time I didn't see it that way, giving up my free time after school, my weekends, and there was no such thing as summer vacation. She taught me the days work was never done until it was tomorrow. When I moved to Chicago over a decade ago I stayed in the hospitality industry doing much of the same I did back in Kansas. At a point I became bored. When I found wine, I found a work and a passion that made me want to devote all my free time to. After some time I traveled to New Zealand and worked with the Weaver family at Churton vineyards for the harvest season, and it felt like home to me, working 12-15 hour days doing, making something that meant as much to them as working for my family when I was growing up. For me wine is that days work that will never be done until it is tomorrow and I am happy to have it that way. So cheers grandma, and thank you for helping me find my way!”

MIKE LOVEISKY-“The Love”

“Musician with a finance degree, night owl by nature, and lover of all things wine & food. I was raised in the Northwest suburbs of Chicago and come from a large family with five siblings. My first job in a restaurant was as a bus boy in a small family owned wine bar; I was 19. I knew nothing about wine at the time, but very quickly became consumed by it. My quintessential “Ah-Ha!” moment was a bottle of 2003 Freemark Abbey Sycamore Vineyards. What started out as a hobby turned into a passion, and somehow years later, into a career. My father raised me on The Beatles and America’s Pastime. So, in the words of the Great Bambino “Remember kid, there’s heroes and there’s legends. Heroes get remembered but legends never die, follow your heart kid, and you’ll never go wrong.”
