We are excited to introduce you to our 2019 Burgundy wines and offer them at our annual special Pre-Release pricing, representing 25% off retail pricing at release. For some of the cuvées, this will also be your only chance to purchase them, with yields being down in several of our parcels, the number of bottles won't match expected demand. So what was 2019 like? Another early start to the growing season, the vines waking up a good two weeks earlier than even recent historic bud breaks. This exposes the young shoots to greater frost risk, and while we escaped the severe damage we saw in 2016, the frost of late April began the cascade towards restricted yield across the board, especially amongst our whites. Flowering was difficult, with a cold, wet and windy June, leading to fewer and smaller berries. Summer had above average sunshine hours, key for healthy plant growth and ripening of the grapes, but below-average rainfall, which further restricted yields. The key last few weeks leading into harvest were warm, but luckily without any great heat-spikes, and thankfully were accompanied by cool nights. Nights are when the vine respires and cool nights are key for the grapes keeping good acidity balance and fresh fruit aromas as the grapes race to ripeness. The result in whites is a concentration of flavour, from the small berries and restricted yield, and great freshness. Floral is a word we associate with our wines from 2019, and they took their time to come around. We extended ageing from our usual 11 months in barrel with a month in tank to 14 months in barrel with another four months in tank. We don't make our wines to a recipe, we listen to them, and we feel this extra time will develop the structure and potential we believe they need and deserve. The vintage combines exuberance, power and freshness, and defies comparison. It's not often that concentration is matched with precision. The flip-side is lower production, at least 30% less across our whites. Some of them will only be available during this offer and won't see retail. So don't hesitate to secure them now. In fact, our Savigny-lès-Beaune saw no pump-overs or plunging, and no new oak was used on any of the three cuvées. Instead, we relied on the grapes' intensity to deliver volume on the palate, over the artifice of manipulation. As with the whites, cool nights preserved fresh-fruit flavours and acidity, the wines again matching freshness with generosity. We think it could be our best vintage of reds yet. Jancis Robinson MW thinks so too, marking our cuvées highly, and saying we are one of her favourite producers of 2019. So what was 2019 like? Another early start to the growing season, the vines waking up a good two weeks earlier than even recent historic bud breaks. Flowering was difficult, with a cold, wet and windy June, leading to fewer and smaller berries. Offering our wines at Pre-Release helps us pay our new season fruit bills while giving you a discount, around 25% below future retail pricing, and access to wines that will be sold out before release. For the third year in a row we are keeping our prices stable. This is despite higher fruit costs (~30% since 2017), a weak exchange exchange rate, higher transport costs, import tariffs, and new administration fees. We believe very strongly in our relationship with all of you who support us at Pre-Release, and we hope these very fair prices, show our commitment to that relationship.

New fruit bills that your Pre-Release purchase will help fund include a Meursault "Sous La Velle" and a Montagny Premier Cru "Les Trueffières", exciting new additions for us. Both vineyards are organically farmed, the Meursault since 2012 and the Montagny Premier Cru for almost 40 years, and made exceptional wines that we are super

excited about! Unfortunately, the Domaine we sourced the grapes for our Santenay 1er Cru "Les Gravières" Blanc and Rouge was sold during the year and the new owner decided on keeping all of his harvest, as such these 2019s we are offering are the last of the line. A shame, but life goes on.

From two parcels of Chardonnay above the v i l lage of Sav igny- lès-Beaune; “Dessus Les Vermots” and “Les Gol lardes” (above orange) , a l l on a steep s lope fac ing south-west wi th poor, white soi ls f rom mi l lennia of eros ion and cooled by the a i r coming down the va l ley f rom the Hautes-Côtes . These att r ibutes lead to a r ipe and generous wine in weight , whi le st i l l reta in ing a core of minera l i ty and dr ive .

vinification

Hand-picked, chi l led overnight , foot-crushed in cases , and then again in our basket press . Pressed over s ix hours wi thout addit ions of SO 2 or enzymes . The ju ice was ox id ised in tank for severa l hours and then racked to a 40 0L and a 3 0 0L barre l w i th a l l of the sol ids (b o u r b e ) for fermentat ion by indigenous yeasts . Aged on fu l l l i e s , w i thout st i r r ing or rack ing , for 14 months , w i th another three months in tank for f reshness . Unf ined, very l ight ly f i l tered and bott led under DIAM 10.

From a s ma l l v i neyard ab ove and west of the v i l lage as the asp e ct s tarts fac ing south-weste r ly. The ju ice was fed oxygen and racked with the best of the b o u r b e (grape sol ids) to 40 0L barre ls for fermentat ion by indigenous yeasts wi th no SO 2, nor nutr ients added. Aged on fu l l l i e s , w i thout st i r r ing or Spr ing rack ing , for 14 months before another three months in tank . Unf ined, l ight ly f i l tered and bott led under DIAM 10.

From an old-v ine parcel of Chardonnay in the l ieu-dit of “Les Tois ières” on the border wi th Meursault , w i th just a road between them! Whi le Monthel ié is known pr imar i ly for i ts reds , which make up 9 5% of the v ineyard plant ings , the v ineyards on the Meursault border are t e r re b l a n c h e , where Chardonnay thr ives and shows i ts greatest express ion .

vinification

The grapes were hand-picked, then chi l led overnight before being foot-crushed the next morning and s lowly pressed over s ix hours . The ju ice was ox id ised and racked into two 3 0 0L barre ls a long with a l l i ts b o u r b e (grape-sol ids f rom the press , fu l l of nutr ients and f lavour/texture pre-cursors) for fermentat ion by indigenous yeasts . Aged on fu l l l i e s , w i thout st i r r ing or Spr ing rack ing , for fourteen months before another three months in tank . Unf ined, l ight ly f i l tered and bott led under DIAM 10.

From a 40-year-old parcel of Chardonnay on Argovian white l imestone, a rar i ty in Santenay, where the Bajocian red soi l of the Côte de Nuits reappears in Chassagne to the north , re igns supreme. Argovian mar l , or t e r re b l a n c h e , i s the c lass ic soi l for Chardonnay in Burgundy, and these v ines were p lanted when Santenay v ineyards were a lmost ent i re ly P inot Noir. A forward th inking v i t icu l teur indeed!

From the only parcel of Chardonnay mid-s lope in Beaune ’s most famous c l i m a t , and adjacent to Bouchard Père et F i ls ’ s monopole “Les Vignes d ’Enfant Jesus” , these 5 0-year-old v ines face south on a perfect inc l ine for sunl ight intercept ion and dra inage . Less than 1% of “Les Grèves” i s p lanted to Chardonnay, and there are only f ive producers lef t who make a white “Les Grèves” . I t i s an honour to be one of them!

From a 6 0-year-old parcel in “Aux Fournaux” . The v ineyard is located at the base of the s lope prov id ing better sunl ight intercept ion and dra inage than most Sav igny v i l l a g e s v ineyards , meaning the wine has f ine def in i t ion and weight for a v i l l a g e s appel lat ion wine . “Aux Fournaux” is a lso at the junct ion wi th Pernand-Vergelesses and Aloxe-Corton, w i th racy f ru i ts f rom the former and rocky tannins f rom the later.

vinification

Hand-picked and then chi l led overnight in our refr igerated t ruck . The f ru i t was sorted to se lect the very best for whole c luster t reatment , the rest dest ined to be t r iaged and destemmed. The sort resul ted in 10% being destemmed and placed on the base of the wooden tank , w i th the remaining 9 0% placed on top for a nat ive , no SO2 fermentat ion . The grapes were untouched for 13 days and then pressed to tank to f in ish . The wine spent 12 months in a mix of barre ls of vary ing s izes and ages wi th only very f ine l i e s . Racked under a i r pressure , sett led for three weeks in tank before being bott led under a DIAM 10 c losure wi thout f in ing nor f i l t rat ion .

From a parcel of 45-year-old and 70+ year-old v ines , on the top hal f of the s lope , very near the border wi th Chassagne-Montrachet . As one might gather f rom the name, the soi l i s a qui te gravel ly, lots of smal l rocks over Argovian mar l . This is s imi lar in composit ion to some specia l Volnay p lots , and thus an inspirat ion for our v in i f icat ion .

vinification

Having found many L e s G ra v i è re s to be very f ru i t- forward , a deep dark cherry note in part icular, we decided to do a 9 5% whole c luster, no SO 2 ferment to help f rame that f ru i t w i th l i ther tannins and high-toned aromat ics . Hand-harvested , chi l led overnight to ensure the c luster ’s turgid i ty, 5% was destemmed and placed at the bottom of the wooden vat , the rest of the c lusters were put on top for a no S O 2 nat ive fermentat ion . The f ru i t was untouched dur ing c u v a i s o n , save for a da i ly sparging wi th CO 2, w i th one p i g è a g e each of the last two days of fermentat ion on sk ins . Pressed on the 13 th day, the wine f in ished in tank before a year in 3 0 0L oak barre ls wi th the f inest of l i e s . Bott led under DIAM 10 without f in ing or f i l t rat ion .

2o19 beaune premier cru “boucherottes” rouge

From two cont iguous parcels , one a 44-year-old se lect ion massale p lant ing , the other a 26-year-old s e l e c t i o n c l o n a l e , a t the southern end of the Beaune Premier Cru s lope below the famous v ineyard of “Clos des Mouches” and next to Pommard ’s grand c l i m a t “Les Epenots” . This is an i ron-r ich white soi l , rocky at the top, t rans i t ioning to more of a mar l at the bottom. Having more l imestone than neighbour ing Pommard, the wines have a f leshy mid-palate pa i red wi th suave , s i lky tannins .

vinification

Hand-harvested , chi l led overnight to ensure the c luster ’s turgid i ty, 5% was destemmed and placed at the bottom of the wooden vat , the rest of the c lusters were put on top for a no SO 2, nat ive fermentat ion . The f ru i t was untouched, save for a da i ly sparging wi th CO 2, w i th one p i g è a g e each of the last two days of fermentat ion . Pressed on the 14th day, the wine f in ished to dryness in tank before a year in oak barre ls of vary ing ages and s izes a long with the f inest of l i e s . Bott led under DIAM 10 without f in ing or f i l t rat ion .

Ful ler, w ider, f resh f ru i t – perfumed. There ’s a lot of whole c luster here but honest ly, i t ’ s hard to see today. Big , f resh , less accommodat ing on the palate than the nose – wai t for th is (you should) here the f lavour of the whole c luster is more v is ib le , great f in ishing . can i drink them yet?A quest ion that we are often asked is when to dr ink our wines . The short answer is whenever you would l ike ! L i fe is short and there is a lways another v intage . The longer answer is that we are st i l l learning a long with you . Wines , especia l ly those made in a low intervent ion way, open and c lose a l l the t ime; they are l i v ing th ings . That being sa id , we get to taste these wines more f requent ly than you might and we are receiv ing feedback f rom importers , restaurants and customers on how they are dr ink ing .

This l i s t i s not bul let-proof, l ike we sa id they are l i v ing th ings , but we fee l that those we l i s t as HOLD wi l l of fer more in the future than they do now, and should be lef t a lone in favour of a DRINK. HOLD/DRINK WITH A DECANT means we would be inc l ined to leave i t longer (but i f you must…) , DRINK/HOLD means you can dr ink them now with p leasure , but holding wi l l reward pat ience wi th further complex i ty. DRINK is se l f-explanatory, w i th DRINK highl ight ing that they are in a part icular ly good spot to be enjoyed now.

about our labels

The extremely ta lented Louise Despont , and future art-wor ld star, c reated the beaut i fu l ar twork for our f ront label . Using draft ing tools , she creates intr icate geometr ic drawings on ant ique ledger paper. Her works draw f rom a very d iverse set of inf luences ; h i n d u i s m , a rc h i t e c t u re , a s t ro n o m y, a n d l i t e r a t u re a n d h a v e a beaut i fu l , subt le symmetry to them. Using only very s imple shapes , c i rc les and t r iangles , she bui lds incredibly intr icate , yet subt le mot i fs . Her work is very layered , in composit ion and in meaning .

This p iece is her interpretat ion of our v is ion for Le Grappin . Harness ing the energies of the season, the v ine and the indiv idual t e r ro i r s to make wines of p lace and soul .
