Ingredients :
1 kilo lamb without bones ( keep
the bones)
3 cups rice
2 tbsp freshly ground cumin
4-5 chopped tomatoes
2-3 potatoes cut into very thin
slices
2-3 onions chopped
salt, pepper
sliced tomatoes
3 full tbsp vegetable butter
Cut the meat into pieces. In a deep Pyrex or clay pan, put the bones from the lamb. Put a
layer of meat over and sprinkle with cumin, chopped tomatoes, onion and salt. Then put
1/3 of rice, sprinkle with cumin, chopped tomatoes, onion and some salt.
Continue the layers in the same way (boneless intermediate) and end with meat. Cover
the entire surface with potatoes, sprinkle with cumin, tomato and chopped onion.
Knuckle over tomato slices and put pieces of vegetable butter across the surface.
Add water to bring up the tomatoes. Bake in a moderate oven for 1 ½ - 2 hours.
