World Famous Frenched Racks

Pilot Frenched Racks—the “Rolls Royce” of frenched lamb racks, always a chef favorite, and the premier center of plate item. An elite standard of preparation is required for the Pilot Frenched Rack, 8 perfect ribs every time allows for preparation of 8, 4, or 2 rib portions without waste. Each rack is wet aged prior to quick freezing to seal in that guaranteed tenderness.

A perfect 8‐rib rack is removed from the carcass between the forequarter and the short loin. Chine and feather bones are carefully removed, and ribs cut evenly to 3” from the eye (at the loin end). The fat cap is removed and ribs evenly machine frenched 1½” from the rib ends.

Leoncini excels at making Prosciutto San Daniele, selecting the best legs and carefully trimming and maturing them.

The ham is deeper red with a whiter fat and is more savory than its Parma

counterpart. We bring in our San Daniele when it’s best aged, from 18-20 months.

Jamón is the leg of the Ibérico pig which has been dry cured for at least 2½-3 years. Deep

red in color, it is intensely flavorful with the perfect

balance of savory and sweet.

Italfine has been making Prosciutto di Parma for over 30 years, always using

premium quality legs selected by hand. This kind of expertise ensures optimum

quality in the production, aging and consistency of the hams, creating a sweet

and tender Prosciutto. Italfine is aged a minimum of 450 days. The prosciutto is completely cleaned and ready to slice.

This Italian dry-cured ham is usually thinly sliced and

served uncooked. A peculiar characteristic of this product is the sweetness which tends to stand out compared to other

Italian Imported ham.
