SINGLE MALT SCOTCH WHISKEYIn order to considered a “single malt scotch”, the whisky must come from a single distillery and be made from malted barley. From here the liquid has to be aged for a minimum of three years in oak casks before being bottled.

HIGHLANDSScotch from the highlands takes on many shapes and forms. There are four distinct sub-regions within this area; north, west, east and south, all producing scotch in various styles and flavor profiles. The north may produce some slightly briny, smokey and complex flavored whiskies like clynelish and old pulteney, but also rich and nutty like dalmore. The west houses very few distilleries, but the most famous being oban with its gentle brine and smoke. To the east, malts tend to be slightly sweet and medium to full bodied like glen garioch. Lastly, in the south there are whisky makers such as deanston and aberfeldy producing malts with softer fruit components and a dry finish.

ISLAY

Islay malts are notoriously known for their smoky and peaty scotches. These characteristicsapply to most distilleries like laphroiag, bowmore and lagavulin. A few exceptions to the ruleare caol ila, bruichladdich and bunnahabhain with their more gentle drams. Some whiskies like the octomore and port charlotte range can really show what extreme peat and smoke can do to a whisky.

GINIn the 17th century, English soldiers watched Dutch soldiers sip a curious liquid before goinginto battle. It was known as “Dutch courage”, but better known to us today as Genever. Originally made from wine and juniper berries and eventually malt, this spirit was used as medicine by monks and was believed to cure disease.

London dry gin would come soon after the British viewed drunken Dutch soldiers in the war. It is a grain spirit that is juniper driven, with citrus notes and a dry finish. Many other “styles”of gin have followed London dry gin, but you can never beat an original.

ARMAGNACArmagnac is a spirit that has to be perfectly crafted. It comes from the Armagnac region in the province of Gascony, which is located in southwest France (south of Bordeaux). There are also sub-regions within Armagnac, these are: Bas-Armagnac, Armagnac-Tenareze and Haut-Armagnac.

Bas-ArmagnacThis is a low altitude sub-region that produces well-rounded, fruity and intense brandies and is located on the western side of the region, near the coastline. About 57% of all Armagnac produced comes from this region. The soil is mainly sand and it is rich with iron and some clay. It is widely planted with Ugni-blanc and Baco blanc grapes. This area is considered to be the equivalent of Cognac’s Grande Champagne region.

ARMAGNAC -TENAREZE

The Tenareze is located in the center of Armagnac. Here there are intense, strongly flavored brandies that will see longer aging than those from Bas-Armagnac. About 40% of all Armagnac comes from this region. The soil here consists of mainly sand, limestone and clay with many small streams running through the land. Ugni blanc and Colombard are the most widely planted grapes here. This is similar to Cognac’s border region.
