2011 Cabernet Sauvignon Adelaide Hills

Paracombe Cabernet Sauvignon is a single vineyard wine with grapes harvested exclusively from the Drogemuller family vineyard’s original Cabernet vines planted in 1992. 2011 was a unique vintage with heavy rainfall and an exceptionally cool Autumn season. Only the best grapes were harvested at the ideal ripening levels. Fruit was harvested from mid to late April. Due to our rigorous fruit selection methods, yields we much lower than previous vintages. The grapes were fermented in small open tanks and hand plunged. Once pressed the wine was left to mature in French Oak 20 months, then bottle aged a further two years in our estate underground cellars before release. Paracombe Cabernet Sauvignon presents good deep, colour in the glass with rich, full fruit flavour. The bouquet has a delicious mix of aromas including cherries, blackcurrant and spicy notes. The palate backs up with generous, juicy flavour. Enjoy ripe currants and plum textured with hints of fine, spicy tannins with a leisurely, long, finish. A smooth, silky wine drinking well now, this wine promises to reward further still with age. 14.5% Alc
