Snack: 1 oz almonds & 1 cup strawberries

Lunch: Lemon Pepper Chicken & Green Beans

Snack: 2 oz tuna & 1 cup carrots and celery

Dinner: Ground Beef Stir Fry

Breakfast: Baco-Tastic Scramble

Snack: 2 Tbsp almond butter & 1 apple

Lunch: Ground Beef Stir Fry

Apple Cinnamon PancakesServings: 1

Baco-Tastic ScrambleServings: 1

Ingredients:1 egg, lightly beaten1 banana, mashed1/2 apple, peeled and diced very small1 Tbsp almond butter1/2-1 tsp cinnamon1/4 tsp nutmeg1/2 tsp vanillaCoconut oil, for cooking

Ingredients:2 pieces bacon2 eggs, lightly beaten2 Tbsp salsaSea salt and pepper, to taste1 cup baby spinach

Directions:Combine mashed bananas and beaten eggs. Stir in diced apple. Add almond butter, cinnamon, nutmeg, and vanilla. Mix until well combined.Heat 1-2 tsp of coconut oil in a skillet over medium -low heat. Pour batter into the skillet in pancake shapes (this recipe will make 4 small pancakes - how many you cook at one time will depend on the size of your skillet. Cook for a few minutes before flipping and cooking on the other side.

Directions:Cook the bacon to desired doneness; set aside. To the bacon grease in the pan, add eggs, salsa, salt and pepper, and spinach. Scramble the eggs. Serve the scrambled eggs with the bacon.

Chicken, Quinoa, and BroccoliServings: 2

Ingredients:1/2 lb chicken breast2 Tbsp coconut oil1 cup cooked quinoa2 cups broccoli florets1-2 Tbsp minced garlicSea salt and pepper, to taste

Directions:Steam broccoli until tender, 5-8 minutes.Heat oil and garlic in a skillet over medium heat.Add chicken to skillet and cook through. Add broccoli and cooked quinoa to the skillet. Stir it all up, and serve warm.

Lemon Pepper Chicken & Green BeansServings: 2

Ingredients:1 cup green beans, washed and trimmed2 tsp extra virgin olive oil2 garlic cloves, minced1/2 lb chicken breastLemon pepper seasoning, to taste

Directions:Preheat oven to 400°F.Wash and trim green beans, and place in a bowl. Add olive oil and minced garlic to the bowl, and stir to evenly coat green beans. Move green beans to the baking dish.Cut chicken into smaller chunks. Arrange chicken on top of the green beans in the baking dish. Sprinkle lemon pepper seasoning over everything in the dish, to taste. Bake for 30-35 minutes, until chicken is cooked through.

Ground Beef Stir FryServings: 2

Ingredients:1 Tbsp coconut oil1 garlic clove1/4 red onion1-2 carrots1/2 medium bell pepper1 cup broccoli1 celery stalk1/2 lb ground beefPinch of thyme, sage, turmeric, and sea salt

Directions:Chop garlic, celery, carrots, bell pepper, and broccoli to preference. Melt coconut oil in a wok (or large sauté pan) over medium heat. Add garlic and onion to pan. Stir to combine and cook for 5 minutes. Add carrots, bell pepper, broccoli and celery. Add broken up pieces of ground beef and stir to combine. Season with thyme, sage, turmeric, and sea salt and stir. Cook while stirring periodically for 10-12 minutes or until there is no sign of pink or red in ground beef and broccoli is tender.
