    A blend of Chinese, Arawak Indian, French, Indian,

    British, African, and Spanish cuisines is what makes

    Caribbean food so unique. Stews made from meats

    (such as goats) and vegetables (such as tomatoes) are

    popular foods in the Caribbean.

    The food in Caribbean is very piquant, tangy, fragrant,

    and spicy. The Arawak Indians and the Caribs were

    two native tribes that lived in Cuba, Puerto Rico, and

    the Dominican Republic. From them came the love ofchili peppers and other spicy food as well as

    barbecuing and using grills.

    Johnny cake - This is a favorite that consists of bread that is pan cooked and made from flour, sugar,butter and milk.

    Baked Crab - This is the most commonly enjoyed dish of the Bahamas and is made with crab, seasonings,bread crumbs and eggs. Once the mixture is made, the crabs are then put back into the shell and baked.

    Baked bonefish - This is another favorite dish among the locals. The fish is split and seasoned with saltand hot pepper sauce and baked.

    Caymanian fruit cake - Made up of fruits that have been soaked in cake wine, rum or cream sherry andbutter, this is a favorite of the island.

    Heavy cake - This dessert is made up of yam or cassava and has coconut milk and spices in it. It is heavy,sweet and spicy.

    Cracked conch - This dish consists of conch that is made much like a breaded veal cutlet.

    Coconut shrimp Turtle steak- This is a favorite among the islanders. It is often served with mangomarmalade that serves as a dipping sauce.

    Coconut dinner- This stew is made up of salt beef or fish that has been cooked in coconut milk. It alsofeatures vegetables, pumpkin, peppers and onions.

    Mango chicken - This favorite is made up of chicken, milk, egg, mango, garlic and pepper.

    Cayman Style Fish - This is lightly breaded and fried fish that is then tossed in tomato sauce and hasbeen prepared with sweet peppers and onions.

    Bulla cake - This is a Jamaican pastry. It is made with molasses, ginger and nutmeg. Thebulla are the little flat, round loaves.

    Callaloo - This common dish in the Caribbean is a Jamaican favorite. A leaf vegetable is themain ingredient.

    Pilau - This dish is made out of pork, shellfish, chicken, vegetables and rice.

    Jamaican patty- This pastry is filled with different ingredients and baked into a flaky shell.

    Fish tea - This spicy soup is a Jamaican favorite. Similar to fish bouillon, it also has groundyam, cassava, potatoes and pumpkin.

    Rice and Peas - Beans and rice that are stewed in coconut milk.

    Red peas soup - This soup is common on the island. It is made out of seasonings like scotchbonnet pepper and pimento seeds and kidney beans.

    Jerk chicken - A favorite, it is jerk spiced pork or chicken that has been grilled. Jerk is a hotspice that comes as a dry rub or marinade.

    Ackee and saltfish - This is traditional in Jamaica and is famous world-wide.
