It’s all about portion control,” Cardel says. “If your mom makes amazing pecan pie, have a slice and then brush your teeth so you’re not tempted to have more. That’s better than not eating at all and watching everyone else enjoy it, because that doesn’t work over the long term.” 2) Watch for emotional triggers It’s not just the festive mood that can lead to overeating. “For some people, the holidays can be really stressful. That can influence people to eat in ways they wouldn’t normally eat because they’re stressed out. Being aware of your feelings and why you’re reaching for that second piece of pie can help you stay on track.” 3) Revamp favorite recipes “My family is from Puerto Rico, and we love to do Latin dishes. I substitute nonfat Greek yogurt instead of sour cream: It tastes exactly the same,” Cardel says. Her other secret weapon? Avocado. She uses it instead of mayonnaise in deviled eggs and even blends it into chocolate mousse. “It’s super tasty and decadent.” She also makes lasagna with steamed cabbage in place of pasta. (Recipes below.) “You don’t miss the pasta. I layer it with low-fat cottage cheese, sauce, ground turkey and sautéed veggies to amp up the nutrition.” 4) Alcohol can be a triple whammy Alcohol not only packs empty calories, but also can decrease your inhibitions, leading to overeating. “There’s this idea that drinking gives you a beer belly, but it’s not necessarily the drinking, it’s the food that comes in association.” Additionally, people who are dehydrated often mistakenly think they’re hungry, Cardel says. “Have a glass of water. If you still feel hungry in five minutes, then get something to eat,” she advises. 5) Start a new tradition It might seem like a long shot to get your family up and about after a big holiday meal, but building in some activity can make the season healthier and more festive. “It could be something simple like bocce or cornhole, or a big family walk. It’s about getting outside and moving instead of falling into food coma.” One thing you shouldn’t do: “Never push your agenda when it comes to healthy behavior – it can easily be seen as shaming. Just get outside with the people who want to go. When everyone sees you guys having fun, they’ll be more likely to go out and have fun too.” 6) Don’t beat yourself up If you fail, focus on figuring out why instead of berating yourself. “Take time to think and assess why it happened. Were you stressed? Did you not get enough sleep? Be kind to yourself. Things happen. Life happens. It’s about progress, not perfection.” # # # Email community@ alachuatoday.com Photo special to Alachua County Today Michelle Cardel’s chocolate mousse has a secret ingredient — avocado. UF has expert tips for a healthy holidayIf you’re trying to avoid

holiday weight gain, nutrition expert Michelle Cardel has some tips, tricks and advice to help you succeed.

“On average, most American adults gain 2 pounds a year. That doesn’t sound like a lot, but it can add up over the years,” says Cardel, an assistant professor at the University of Florida’s College of Medicine.

She offers these tips to stay healthy through the holidays and beyond.

1) Deprivation doesn’t work“We like to dichotomize

food into good and bad, but there is no food that you should feel guilty eating. It’s all about portion control,” Cardel says. “If your mom makes amazing pecan pie, have a slice and then brush your teeth so you’re not tempted

to have more. That’s better than not eating at all and watching everyone else enjoy it, because that doesn’t work over the long term.”

2) Watch for emotional triggers

It’s not just the festive mood that can lead to overeating.

“For some people, the holidays can be really stressful. That can influence people to eat in ways they wouldn’t normally eat because they’re stressed out. Being aware of your feelings and why you’re reaching for that second piece of pie can help you stay on track.”

3) Revamp favorite recipes“My family is from Puerto

Rico, and we love to do Latin dishes. I substitute nonfat Greek yogurt instead of sour cream: It tastes exactly the same,” Cardel says.

Her other secret weapon?

Avocado. She uses it instead of mayonnaise in deviled eggs and even blends it into chocolate mousse. “It’s super tasty and decadent.”

She also makes lasagna with steamed cabbage in place of pasta. (Recipes below.)

“You don’t miss the pasta. I layer it with low-fat cottage cheese, sauce, ground turkey and sautéed veggies to amp up the nutrition.”

4) Alcohol can be a triple whammy

Alcohol not only packs empty calories, but also can decrease your inhibitions, leading to overeating.

“There’s this idea that drinking gives you a beer belly, but it’s not necessarily the drinking, it’s the food that comes in association.”

Additionally, people who are dehydrated often mistakenly think they’re hungry, Cardel says.

“Have a glass of water. If you still feel hungry in five minutes, then get something to eat,” she advises.

5) Start a new traditionIt might seem like a long shot to

get your family up and about after a big holiday meal, but building in some activity can make the season healthier and more festive.

“It could be something simple like bocce or cornhole, or a big family walk. It’s about getting outside and moving instead of falling into food coma.”

One thing you shouldn’t do: “Never push your agenda when it comes to healthy behavior – it can easily be seen as shaming. Just get outside with the people who want to go. When everyone sees you guys having fun, they’ll be more likely to go out and have fun too.”

6) Don’t beat yourself upIf you fail, focus on figuring

out why instead of berating yourself.

“Take time to think and assess why it happened. Were you stressed? Did you not get enough sleep? Be kind to yourself. Things happen. Life happens. It’s about progress, not perfection.”

Christmas means HOPEI’ve always loved

the story about the little boy who had not really been good all year, so his parents told him that if he would sit down and write a letter to the baby Jesus and convince him of his changed ways he just might have a good Christmas.

Motivated to insure the usual bounty of presents, the boy runs upstairs to convince the baby Jesus. He sits down and begins. “Dear baby Jesus, I promise to do all of my homework on time and without giving my parents any grief from now on.” He stops for a moment and says to himself, “No, he’ll never believe that.”

So he starts again. “Dear baby Jesus, I promise to never fight with my sister again” Then he stops and says to himself, “No, he’ll never believe that either.” Finally, after several attempts that always seem to end the same way, he gets

up and runs downstairs and retrieves the small figurine of Mary from the Nativity scene that had been placed under the Christmas tree. He takes it upstairs and hides it deep in the back of his sock drawer. He goes back to his desk and writes these words, “Dear baby Jesus, if you ever expect to see your mother again....”

Now that’s humorous, but the truth is sometimes in our desperation we look for any avenue we can to try and find some relief and peace.

After many years of walking with and leading people, I have come to discover that Christmas is not always

the most wonderful time of the year for many.

In our own growing congregation there are many blended or broken families trying to navigate through the challenges that past events have created.

There are some with strained relationships that would love nothing more than to be able to sit together and enjoy the holidays with those that they have been estranged from, but the other parties want nothing to do with them.

There are some who have lost loved ones this last year, and they are facing their very first Christmas without

them. The grief is overwhelming.

And yet in spite of all of these discouraging c i r c u m s t a n c e s , what Christmas still provides is this amazing opportunity for hope and a belief that regardless of what we’re facing the best is yet to come!

The name that was most distinctive to the savior that was born on that first Christmas morning was Immanuel which means “God with us.” Listen to it again, God with us!

It means we are never alone. We have not been abandoned or left to fend for ourselves. We have been thought of, provided for and

reached out to. This is amazing, and when we allow the truth of it to penetrate our hearts it can change everything.

So no matter what you’re going through at present, or the specific challenges you may be facing right now, God is with you.

He really does know, and He really does care. May this season be filled with peace and hope. May you come to know the reality of His presence. And may you experience the truth that not only is God with us, but that He is for us as well.

IMPORTANT INFORMATION ABOUT

YOUR DRINKING WATERThis is not an immediate risk.If it had been, you would have been notified immediately.

This notification is a revision of the recently distributed notice.

Our water system did not meet the requirements of a drinking water standard. Although this is not an emergency, as our customers, you have a right to know what happened, what you should do, and what we are doing to correct this situation.

The City of High Springs must notify cit izens that the water system exceeded the standard, or Maximum Contaminant Level (MCL), for Stage 2 Disinfection Byproducts (S2 DBP), which includes Total Trihalomethanes (TTHMs) and Haloacetic Acid [ F i v e] ( H A A 5 s) , b e t w e e n July through September 2015. Compliance for DBPs are based upon the average level over the last year at each location. This is called the Locational Running Annual Average (LRAA). The acceptable MCLs levels for TTHMs and HAA5s are 80 micrograms per liter (µg/L) and 60 micrograms per liter (µg/L) respectively.

The LRAA for 25083 NW 210th Lane (Boat Ramp) locat ion , previous four quarter sampling was 89.76 µg/L for TTHMs and 68.38 µg/L for HAA5s, which exceeds the MCL acceptable average. Please note the samples taken September 21, 2015 were below the MCL acceptable average, with 70.10 µg/L for TTHMs and 54.98 µg/L for HAA5s.

The LRAA for the 110 NW 1st Avenue (City Hall) sampling location is 60.27 µg/L for TTHMs and 59.54 µg/L for HAA5s, which is below the MCL and in compliance with drinking water standards. The samples taken September 21, 2015 were also below the MCL acceptable average, with 43.77 µg/L for TTHMs and 52.01 µg/L for HAA5s.

Please share this information with all other people who drink this water, especially those who may not have received this notice directly (for example, people in apartments, nursing homes, schools and businesses). You can do this by posting this notice in a public place or distributing copies by hand or mail.

Some people who drink water containing TTHMs in excess of the MCL over many years may experience problems with their liver, kidneys, or central nervous system, and may have an increased risk of getting cancer.

Some people who drink water containing HAA5s in excess of the MCL over many years may have an increased risk of getting cancer.

Any customers who are concerned about their exposure to DBPs may choose alternative sources of water for ingestion. Public Notice is required quarterly until the LRAAs are below the MCL. We hope that with the recent quarterly levels below the MCL, the LRAAs will continue to decrease and return to compliance with drinking water standards.

The City of High Springs Water Department is doing the following to ensure that the S2 DBP results will decrease and will not continue to exceed limits:• Reducing the levels of the storage tanks in order to decrease the water age.• Increasing flushing of water lines.• Have cleaned and inspected our storage tanks.

The Public Works Department will continue to sample quarterly and you will be informed with the levels of DBPs are below the MCLs at both sampling locations. For more information on Disinfection By produc t s , ca l l EPA Safe Drinking Water Hotline at 800-426-4791 or Florida Department of Health at 850-245-4444.
