Bajan CoolerFull and flavourful, this cocktail features the soft oak aromas of Mount Gay Rum Eclipse, followed by the sweet tang of passion fruit and a zesty ginger finish.

50ml Mount Gay Rum Eclipse20ml fresh passionfruit juice or passionfruit purée100ml ginger beerMethod: Fill a highball glass with ice. Pour in all ingredients and stir well. Garnish with a fresh mint sprig over the drink.

500g Raisins250g Pitted Prunes, chopped125g Sultanas125g Currants250g Pitted Dates, chopped200g Glace Cherries1 cup Chatelle Napoleon Brandy

250g Butter, cut into small pieces

1 1/2 cups Dark Brown Sugar1 tablespoon Vanilla Essence4 Eggs200g Dark Chocolate1/2 cup Apricot Jam1/2 cup Apricot Nectar2 cups Plain Flour1/2 cup Self-raising Flour1 tablespoon Cinnamon1 tablespoon Icing Sugar

Method1. Mix the fruit in a large bowl and add the brandy.

Allow to soak overnight.2. Preheat oven to 160ºC.3. Line a deep 23cm round cake tin with a

double layer of baking paper.

4. Mix the sugar, butter and vanilla until creamy.

Add the eggs one at a time, beating well.

5. Stir the fruit into the mix and ensure thoroughly mixed.

6. Melt the chocolate over simmering water. Stir the apricot

jam and nectar into the chocolate. Pour over the fruit mixture and stir well.

7. Add all the flours and cinnamon to the mix. Fold in well. Pour the mix into the tin

and spread evenly. Tap the tin to settle the contents. Smooth the top with a wet hand.

8. Place tin onto middle rack of the oven. Bake for 2½ to 3 hours. Test with a skewer to ensure baked,

then remove from oven. Leaving the cake in the tin, wrap with kitchen towels and leave overnight.

9. Dust with icing sugar before serving.
