Raspberry-Cream Cheese Muffins Cooking Light ~ June 2003 2/3 cup (5 ounces) softened cream cheese 1 ½ cups sugar 1/3 cup butter, softened 1 large egg 1 ½ teaspoons vanilla extract 2 large egg whites 2 cups all-purpose flour ½ tsp salt 1 tsp baking powder ¼ tsp baking soda ½ cup low-fat buttermilk 2 cups fresh or frozen raspberries ¼ cup finely chopped walnuts Preheat oven to 350°F. Combine cream cheese and butter in a large bowl. Beat with a mixer at high speed until well blended. Add sugar; beat until fluffy. Add vanilla, egg whites, and egg; beat well. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, and salt. With mixer on low speed, add the flour mixture and buttermilk to cream cheese mixture, beginning and ending with flour mixture. Gently fold in raspberries and walnuts. Place 24 foil cup liners in muffin cups. Spoon batter evenly into liners. Bake at 350° 25 minutes or until a wooden pick inserted in center comes out clean. Remove from pans; cool on a wire rack. The knees and hips are vulnerable to wear and tear. Cartilage is the slippery lubricant that covers your joints and lets them glide smoothly. Over time, this cartilage can wear away. Age, weight, and old injuries contribute. This is called osteoarthritis (OA). 2. The first sign of hip OA is often stiffness in the groin or thigh. You may notice pain in your groin, thigh, or buttocks when you exercise. It may be worse in the mornings. In the early stages of OA, resting will usually relieve the pain. 3. The first sign of knee OA is often pain and stiffness. Similar to hip OA, pain is typically worse in the morning. You may find that your knee locks or buckles when you walk. Eventually, you may feel pain and have trouble flexing your knee. Kneeling or climbing stairs may make the pain worse. 4. You can relieve OA at home. First, get enough rest. While it's important to stay active, give your joints time off when they hurt. Supplements, pain relievers, and anti-inflammatory drugs like Motrin may provide relief. 5. Losing weight reduces pain and stiffness. Being overweight puts extra stress on your knees and hips. Doctors say that every 10 pounds you lose can lower your arthritis pain by as much as 20%. 6. Exercise helps joints work better. Keep limber and start with stretching. Utilizing low-impact exercise will strengthen your joints and increase their range of motion. Stronger muscles can reduce the stress on your joints during everyday activities, too. 7. OA of the knee or hip can make it hard to walk. If there isn't enough cartilage lining your joint, walking might hurt. Your joint may get so stiff that you can't bend your knee or rotate your hip. Severe OA may require the use of a cane to walk. 8. Without treatment, OA usually gets worse. As the cartilage continues to wear away, the joint may become swollen and painful. In severe cases, bone rubs directly against bone, making any movement of the joint excruciating. Even at this point, you can still take steps to slow the damage. 9. Joint replacement may alleviate pain. When other things don't provide enough relief, your doctor may recommend a hip or knee replacement. 10. If you’re not ready for joint replacement. On May 28th, I had the pleasure of attending graduation exercises for the Class of 2015 at the Sidney Kimmel Medical College of Thomas Jefferson University. Four years ago my wife and I set up a scholarship fund in my mother's memory and the first recipient of that scholarship, Christine Chang, MD, was one of the graduates. It was a memorable occasion. And it was particularly special for me because it was the 40th anniversary of my graduation from Jefferson. One touching moment occurred when the Hippocratic Oath was administered and all of the physicians in the audience were asked to join in.

When Judy and I made the decision to create the scholarship, it was done because my mother was a driving force in my becoming a doctor and attending Jefferson. When we established the scholarship, however, we had no idea we would receive far more than we had given. Christine has become a "daughter" to us and we are so proud of her accomplishments. In addition, we've become acquainted with her family. Her mom and dad are hard-working immigrants much like my parents were.

So... back to the graduation. Mr. and Mrs. Kimmel were in attendance. When the renaming of Jefferson to the Sidney Kimmel Medical College took place, there was grumbling and controversy among some graduates as to whether this was appropriate. The re-naming of medical institutions, however, is not new, and I personally could not see a downside. Sidney Kimmel, who grew up relatively poor in Philadelphia, rose through the ranks to become CEO of the apparel company, Jones New York, and is a real life Horatio Alger. He has been generous in providing funds for cancer research at many institutions including Sloan Kettering and Johns Hopkins.

Viktor Frankl, an eminent Viennese psychiatrist, was a Nazi concentration camp survivor. In his famous book describing his experience Man's Search For Meaning, he wrote "Everything can be taken from a man but one thing: the last of human freedoms- to choose one's attitude in any given set of circumstances, to choose one's own way..."

Medicine, the proudest profession, has been crushed by onerous government regulations, emasculated by insurance companies, and pillaged by lawyers. As physicians, we still have the ability to choose our attitude. I am determined to survive and thrive. My experience with philanthropy has given me a new understanding of what is really meaningful. I "get" why people like Sidney Kimmel do what they do. It is a privilege and honor to give.

Why people with osteoarthritis feel pain remains a mystery. The current osteoarthritis pain theory implicates certain proteins. These proteins stimulate nerve endings and cause pain. Once of these “villainous” proteins is called nerve growth factor (NGF). Clinical trials are currently being conducted to evaluate how effective an antibody directed against NGF might be in helping to reduce the pain of osteoarthritis. Here, at the Arthritis Treatment Center, we are conducting a number of clinical trials evaluating the effectiveness of antibodies directed against NGF to help relieve the pain of osteoarthritis in the knee and hip.
