There are well liquors,(lowest), call, super-call, premium, and super-premium (most expensive.)Liquor comes in several different types. * It is the servers responsibility to bring coffee, hot water, ice cream, and milk to the bar, if your guest orders a drink containing any of these ingredients.
* Two common drinks that contain ice cream are mudslides and bushwhackersIf a guest orders any of the above with a mixer example: Vodka & Tonic they will receive 1 oz of alcohol. The price of the drink depends on which liquor you UP-SELL to.
If a guest orders their liquor on the rocks or straight up you must hit the UP or ROCKS key and the guest will receive 2 oz of the liquor for only $1.00 more
There are several drinks that contain multiple liquors and have a name to them. You will find these under the COCKTAILS submenu on the computer listed alphabetically. They may have 1 liquor and 3 mixers or 3 liquors and 1 mixer. They all have their own recipe. The amount of liquor in each drink depends on how many different types of liquor are in the drink.
EXAMPLE:
A Bay Breeze has vodka, cranberry and pineapple -- because there is only 1 liquor the guest would get 1 oz of vodka.
A Sex on the Beach has vodka, rum, peach schnapps, orange juice, and cranberry juice -- because there are 3 liquors the guest would get oz of each liquor for a total of 1 oz.
All Cocktails have a set base price. If you UP-SELL, the price will change depending on what brand you up-sell to.
Questions to ask with a Martini:
*May I see your ID
*Gin or Vodka (always UP-SELL it is all liquor they will want the good stuff)
*Rocks or Up?
*Dry and/or Dirty?
Here are some terms you might hear when drinks are ordered by a guest:
ON THE ROCKS:
2oz of liquor with ice
STRAIGHT UP:
2oz of liquor straight no ice
NEAT:
the liquor only in a glass, not chilled, no ice
DIRTY (MARTINI):
olive juice added to their drink
WITH A SPLASH OF _____: 2 oz of liquor with a touch of mixer
LEMON TWIST:
Twisted lemon peel in a drink
LIME SQUEEZE:
Lime wedge squeezed in the drink
CHILLED:
The drink is shaken over ice and strained
DRIZZEL:
Chocolate or caramel drizzled on the inside of the glass
DOUBLE:
They want double the alcohol (extra charge)
Tall:
More mixer and tall glass
DRY (MARTINI):
NO Vermouth Rocks Mix: Triple sec, Sweet & Sour, and TequilaEXAMPLES:
Id like a Vodka Martini, extra dirty, extra chilled, straight up
This means, 2oz of Vodka, mixed with extra olive juice, shaken with ice and then
strained into a glass

To up sell a margarita to either Margaritaville Gold, 1800, or Patron, a kicker tube is used. Kickers are half tequila and half triple sec, amounting to 0.7 ounces of liquor (making the total amount of liquor in the drink roughly 2 ounces). Kickers only come with margaritas Only 1 kicker per margarita
Regular Margaritas (without kickers) are $6.00.
Margaritaville Gold/Quattro des Amore kicker: $1.00
