2. Inaheavybottomedpot,suchasenameledcastiron,combineallcarameltoppingingredients,butnotthevanillaextract.Bringtoaboilandstiruntilsugarsaredissolvedandthemixtureiswellcombined.Usingacandythermometer,watchforthegoalofabout230°F.Allowtoboilatthistemperatureforseveralminutes,untilitbeginstoclimbover235°F.Stircontinuously.
3. Removefromheatandstirinthevanillaextract.Allowtocoolforacoupleofminutesandpourontopreparedparchment.
4. Oncechilled,cutintopieces.Meltchocolateandshorteninginmicrowaveat30-secondintervalsuntilmeltedandsmooth.Dipcaramelsintomeltedchocolateandcoolonparchmentpaper.Topwithcandiedbaconcrumbles,ifdesired.

1. Preheatovento200°F.Linelargebakingsheetwithparchmentpaper.Setaside.
2. Thinlysliceappleusingaverysharpknifeoramandolin.Placetheappleslicesinasinglelayeronpreparedbakingsheet.Sprinklewithsugar.
3. Bakefor2hours,flippingappleshalfwaythroughbaking.Turnoffovenandletapplescoolcompletely.Crushapplechipsintolargepieces.Setaside.
For the bark:
