Welcome to Fishbrook Design Studio, a small, efficient architecture firm focused on design and client service. Our office is located 40 minutes north of Boston.

As founding principal, I have over two decades of experience with food projects including new ’one-off’ restaurants, prototypes, quick-service, bakeries and cafés as well as institutional dining. These projects range from high-profile, big budget work to small, simple eateries. In addition to leading the design team, I also facilitate restaurant development studies by analysing menu-driven equipment requirements, supporting front-of-house/back-of-house/ROI studies, site selection analysis and leasing support.

This booklet contains images and descriptions of some of my hospitality and restaurant projects. In addition to com-pleted projects, it includes studies and design sketches that illustrate our process.

$12.9 million

Fishbrook Design Studio teamed with BBGM on this three phase renovation of the public areas

of the Seaport Hotel in South Boston. The 4 star Aura Restaurant, Lobby and mezzanine level

conference rooms are unified by their fresh, sophisticated nautical feel. Furniture, upholstery

and finish materials form a coordinated environment that speaks of gracious, understated

luxury. The expanded Tamo Bar takes its inspiration from wave forms and nautical themes. The

warm woodwork and intimate scale encourage conversation and lingering.

This café is conceived of as a neighborhood gathering spot open 18 hours a day. Nero d’Oro (“golden black” in Italian) serves

from dawn until last call. The decor is simple, warm and sophisticated. FbDS guided the client team through the challenges of

New York City permitting and construction as well as coorinating the work around difficult existing conditions.

4,000 sf.

This café is located adjacent to Sebastians Corporate Office and Sebastians

Interactive Test Kitchen. It is the flagship location for a national chain of fresh cuisine

cafés. Using a series of flowing, floating forms the design gives shape to the queueing

patterns formed during peak business. The materials evoke a brisk pace and freshness

and mesh with the literal walls of lettuce and fresh produce on display.

This is a place to Celebrate Food! SITK is a 1,600 sf culinary teaching space used for team building and

similar events featuring haute cuisine cooking. The design borrows from Culinary schools, High End

Dining and Commercial Kitchen design. The decor is both durable and beautiful: Soap Stone Counters,

Slate Feature Walls and Bamboo Cabinets. Instruction and ambiance are enhanced by a closed circuit

television system and a wall of six large, plasma screen televisions.

LIGHTHOUSE COMPLEXSeaport HotelBoston, MA 2007

The Lighthouse complex is a 12,000 square foot element of the conference and event facility operated by Seaport Hotel Bos-

ton. Arrayed on two levels, the event rooms, kitchen and bathrooms are connected by a sculptural stair which has glass and

wood handrails. Our hospitality interior specialists, BBGM helped us develop a decor and finishes that emphasize the airy and

open nature of the glass event rooms. The Plaza Level is two stories above street elevation and has a commanding view of the

skyline of Boston’s financial district.

This concept fuses the notions of fresh, healthy and fast with the world’s favorite comfort food.

Working with branding partner PROVERB, Fishbrook Design Studio created a design concept and ’kit

of parts’ that can be rolled out in a wide array of tenant spaces and stand-alone locations.

For this project, Fishbrook Design Studio interprets and updates the de facto prototype of a New England-based

Mexican restaurant chain. By channeling the Latin American Baroque architecture of Buenos Aires and Mexico City,

we create a feeling of culture and elegance which hints at the uncommon sophistication and freshness of the

Margaritas menu and attitude.

AMERICAN CONCEPTWilson, NC

AMERICAN CONCEPT:Wilson, NC 2009 - 2010.

In this series of studies, Fishbrook Design Studio explores aesthetic themes and menu/kitchen/seating relationships

for an established restaurateur in the exurbs of Raleigh, NC. Chef Debi Luper operates a thriving French cuisine

restaurant in Wilson’s revitalized downtown. We helped her explore the feasibility of opening an American concept

restaurant. We surveyed downtown buildings and conducted ‘test-fit’ excersises which looked at menu variations.

PARAMUS PARK SHOPPING CENTER:Paramus, NJ

PARAMUS PARK FOOD COURT:Paramus, NJ 2001 [Prellwitz Chilinski Associates]

While at PCA Matthew was the project manager and Associate-in-Charge for this $48 million fast-tracked retail center. The

mall’s 425 seat food court is served by 12 individual food tenants. Base building design accommodates these food tenants

as well as dry-goods tenants on the upper level food court area. The food court has 5 distinct seating areas, each with an

identifiable and unique character. These different ‘neighborhoods’ create diverse, relaxing environments. The project also

incorporates sub-surface utilities and structure for two future 8,000sf restaurant tenants flanking the Phase 2 south entry.

DUNKIN BRANDS PROTOTYPESChicago, ILLake Park, FLThousand Oaks, CA

Chicago, the design team re-designed the building in-

corporating custom, point-of-purchase, theming and

signage concepts while on a tight construction sched-

ule. Dunkin Diner: Lake Park, Florida we re-configured

an aging coffee shop to resemble a 50s style, modern

diner. BR (aka Baskin Robbins): Thousand Oaks, Cali-

fornia. This project renovated an existing in-line store

to accomodate a new menu and aesthetic theme.

Fishbrook Design Studio provides leasing

documents. We measure the as-built con-

ditions and create a layout of the space

showing: Usable Area, Building Common

Area, Gross Rentable Area, Load Factor

and other breakdowns. Our documents

conform to BOMA standards and lease-

specific requirements. We also create and

administer tenant improvement criteria for

property developers and managers.

ABOUT FISHBROOK DESIGN STUDIO:

“Architecture is about people as much as it is about wood and stone.”

Matthew Juros founded Fishbrook Design Studio in 2004. His practice fo-cuses on Retail, Hospitality, Residential, Education and Commercial projects. Fishbrook is a nimble and efficient firm. It uses technology and a network of consultants to take on projects nationwide and next door. Fishbrook has recent projects in North Carolina, Vermont, New York City and Connecticut as well as Massachusetts. Matthew has also completed projects in California, Illinois, Florida, New York state and New Jersey.

“I make it a priority to be directly involved with each project. My relation-ships with owners and contractors are the cornerstone of this practice. The voices of the owners, the builders and the designers must all be heard in the search for solutions which serve the budget and schedule as well as space, spirit and function.”

A registered architect with 24 years of experience, Matthew is the father of a fourteen-year-old daughter and resides in Haverhill, MA. Before starting Fishbrook, he worked at architectural firms in Boston and Cambridge. After 15 years at larger corporate firms he founded Fishbrook as a way of working in a more personal and crafted manner. He has deep experience designing institutional projects as well as high-end residences. He has managed retail, hospitality and public space projects. These larger, fast-track projects pro-vide a context for his current practice.

Matthew serves on the Historic District Commissions in Boxford and Haver-hill. He has been appointed to the Mayor’s Downtown Development Com-mission in Haverhill. His studio was originally located in Boxford, MA in a renovated barn overlooking the Fish Brook. In January, 2011 the practice moved to a loft space in the ‘Arts District’ of Haverhill, MA north of Boston.
