We are glad we are considered essen- tial,” Jennifer Thomas of Thomas Poultry Farm in Schuylerville tells The Chronicle. The family farm, in business since 1948, has nearly 200,000 chickens that lay 15,000 dozen eggs a day, said Mrs. Thomas. She said that when Governor Cuomo announced the stay-at- home order, “people could not get enough product....I think some people must have 15 dozen eggs in their refrigerators.” She laughed, “Who is eating all these eggs?” Before Easter, she’d been concerned. “Our reserve is gone.
